Skyline chili, or Cincinnati Chili, is an institution in Cincinnati. People around here LOVE Skyline, and will eat it in any form. Classically, you eat a “3-Way”…which is spaghetti, chili, and a mound of finely shredded cheddar. Then, there’s the “4-Way”, which adds kidney beans, and the “5-Way”, which adds chopped white onions. The next traditional way to eat Skyline, is a Cheese Coney…a hot dog with chili and a mound of cheddar. There’s also Chili Cheese fries, and sandwiches. You name it. The last way, which might be my favorite, is Skyline Dip…which you make at home with the canned chili they sell at the grocery store. Picture this: a layer of cream cheese, chili, and a bag of shredded cheddar, baked in a casserole dish until melty and golden — eaten with tortilla chips or fritos. Yes, this is the glorious institution that is Skyline Chili.
Hey Caralyn ~ If you get this soon, great, if not, that's fine too, but I'm about to make your version of the Skyline Chili (yeee whoo!) but was wondering if one could use raw cacao in place of the unsweetened cocoa? I'm thinkin', sure why not...but wanted to ask your opinion first. Hope you're having a great day! :)

DeleteI was JUST going to tell you that I ended using the raw cacao after all. I did the smart thing (dah) and googled. For such a small amount and in the case (it being in chili and not in a baked good), I came to the conclusion (from what I was reading), this it would be perfectly fine AND well, even healthier to boot since raw cacao is a superfood. Can't believe you've never had it (I'm actually stunned!). ;) You ought to look into it and, knowing you, you'll come up with some really fantastic concoctions. I use it a lot in healthy versions of soft serve type ice creams and healthy shakes, both that made in the Vitamix (I LOVE my Vitamix!). :)

DeleteOk. When you said we were in for a treat, you were SO right! Caralyn, this chili is SO GOOD!!! We seriously didn't want it to end!!! You did it again—passed on yet ANOTHER winner. One we will, for sure, have over and over again. YUMMMMYYY! (lol). And the array of spices with everything else creates such a uniquely fantastic aroma setting this chili apart from all the rest (that we've ever had, anyway). But I must tell you, I substituted the green (or yellow) pepper for a red pepper since we don't care much for the flavor of green peppers (and feel it is too domineering) but LOVE red peppers and thought it would be a great addition to your masterpiece. And it was! (in our opinion, of course). Also I served it atop brown rice elbow macaroni rather than the brown rice spaghetti since that was what we had. LOVED that as well. All I have left to say now is, we are hooked and perhaps addicted because I can't wait to make it AGAIN! (lol) P.S. Having leftovers for lunch. :) Hope you're having a great day!

DeletePopped on here to recreate this recipe in 'Pages' (so I can print it) as I somehow lost my original. Sorry I babbled so much before (eesh!). But, I just have to tell you, this dish IS a staple in our rotation, but now I also have it with cut up avocado atop the chili. If you've not tried it yet with avocado, you must. It is over-the-top reDICulous! And now, I can never have it without. :) Again, many thanks to you for sharing this wonderful recipe! Hope all is swell with you. :)
