Cozy Golden Cauliflower with Red Sauce! GF, Vegan, SCD & Paleo!

How is everyone's week going?



Good news...tomorrow's FRIDAY!!! :D

What do you have planned for the weekend?



Well today it rained. All. Day. And there's no better remedy for a rainy day then a lovely home cooked meal -- preferably involving the oven and roasted veggies:) haha



Enter: today's recipe: Cozy Caramelized Cauliflower with Red Sauce!



Half a head of cauliflower roasted to golden brown perfection, topped with a beautiful tomato sauce and fresh basil. Y-U-M.

And it's Gluten Free, Vegan, Specific Carb Diet Friendly, and Paleo!



Here's what you need: (Serves one)

1/2 head of cauliflower

handful of baby spinach
3 button mushrooms, sliced
fresh basil, chopped (garnish)

Sauce:
1 tomato, diced
1/2 red pepper, diced
1/2 red onion, diced
2 garlic cloves, minced
1/4 tsp herbs de provence
1/4 tsp salt
several "cracks" of black pepper



Preheat oven to 400 degrees. Place your halved cauliflower, cut-side-down on a tin foil-lined, olive-oil sprayed baking sheet. Spritz with olive oil, and bake for about 45 minutes, until its golden brown and delicious, otherwise known as GBD :)



In the meantime, make your sauce. In a skillet, sauté your onions and peppers in 1 Tbsp olive, salt, pepper, and herbs de provence. Let those soften for about 5 minutes. Add your garlic and let it cook for another 3 minutes. Finally, add your tomato and let it cook for about 4 minutes. Carefully transfer to your food processor, and process until smooth.

Finally, brown your mushrooms in the skillet - about 3 minutes per side.

At this point, you should have about 10 minutes left on your cauliflower -- which is the perfect amount of time to clean the food processor, set the table, and pour a glass of wine :)



To assemble, place your cauliflower on a bed of spinach. Top with the tomato sauce, mushrooms, and garnish with fresh basil. Serve warm.



My goodness, what a delightful dinner! The perfect ending to a rainy and rather gloomy day.

It was such a stunning dish - with the golden brown outlines of the cauliflower, and the bright red tomato sauce. It was so beautiful against the bright green from the spinach and basil.



But more than that, it was DELICIOUS. If you've never had roasted cauliflower before, consider this your personal invitation. It is seriously amazing. I'm not kidding -- magic takes place in the oven, my friends, magic! It becomes caramelized and has a nutty flavor! For a girl that can't eat bread, it almost tasted like bread! hah ok, well...how about...reminiscent of bread. :)



And the sauce was wonnnnderful. The herbs de provence gave it a warm and cozy flavor that had a delicate sweetness to it. And the basil gave it a nice *pop* of freshness.



So. Good. This is my next dinner party meal for sure:)

Finally, I was watching Gilmore Girls, and to my delight, check the sign on the door of the town grocery store...you may know my love for all things winter squash, so the screen grab was particularly humorous. Check back on Monday for a special butternut squash recipe:)

Garden Fresh Vegan Ratatouille! GF, V, SCD, & Paleo!

How the heck are ya?! Gosh, it has been FOREVER and I am so sorry about that.

Things here in NYC have just been going at hyper speed!

So I've been getting a bunch of emails from you guys wondering where I am and if I've fallen off the face of the earth! So I thought I'd take a minute to fill you guys in on what I've been up to:)

First of all: I've missed you guys. A lot. And thank you to everyone that sent me an email as to my whereabouts. Your kindness is truly what makes the world go 'round:)

OK so what in the name of Pete have I been up to?!

Wellllll...things have gotten super busy on the acting front.

I'm excited to announce that I will be playing the lead role of Autry in the upcoming TV pilot, "Heroes of the Street." It's about paramedics and it starts filming this December in Philly. So that's exciting. It's Facebook page is found here! Check it out!! :D



Also, I may have mentioned this already, but I was also cast in a horror film trilogy, called the Coffee Cafe. That will be shooting in 2016 in North Carolina. So exciting stuff folks! It's Facebook page can be found here!



So lots of stuff going on. Annnd I finally "broke down" and created a Facebook "actor page" that I update regularly, so if you want to "keep tabs" on this gluten free gal, you can find me there as well:)  Here's that Link!



So that's the news on this front. I did a few other projects here recently too: several commercials, a role on Oxygen's "My Crazy Love," and a spot for a new alcohol delivery app called Thirstie. It's a pretty interesting idea - like Seamless but for alcohol. You can check out its Facebook page here!

Alright, now for a new recipe! Garden Fresh Vegan Ratatouille!



This one is actually courtesy of my sister-in-law! For Christmas dinner last year, she came up with this brilliant SCD recipe that was SO GOOD! I thought it was perfect to share with you all as Thanksgiving is rapidly approaching!



It was a hit! Layers of fresh veggies - tomatoes, eggplant and zucchini, all smothered in a delectable tomato and red pepper sauce. YUM.

And it's Gluten Free, Grain Free, Vegan, Specific Carb Diet friendly, and Paleo!



Here's what you need: (Serves 6 as a side dish)

2 zucchini, sliced thin on a mandolin
2 yellow squash, sliced thin on a mandolin
2 medium eggplant, sliced thin on a mandolin
3 tomatoes, sliced thin

Sauce,
2 large tomatoes, chopped
1 red pepper, chopped
1 onion, diced
2 garlic cloves, minced
1 tsp dried basil
1 tsp dried oregano
1 Tbsp EVOO
1/2 cup raw cashews

Prep your veggies by carefully slicing them on a mandolin. (Use a hand guard!) Set aside.

Next, make your sauce. In a large skillet, sauté your onion and red pepper with your EVOO, herbs, salt and pepper for about 5 minutes over medium heat, until softened. Then add your garlic, and let it cook for about 2 more minutes. Finally, add your tomatoes, and let them cook for about 2 minutes, until warmed through. Set aside.



In your food processor, place your cashews. Process them for about 30 seconds, until you get a fine powder. Then, carefully add your vegetable mixture. Process until you get a smooth, creamy sauce. (You can make this a day ahead of time, and store in a Tupperware in the fridge if you're making this for the holidays.)

When you're ready to bake it, place 1/4 cup of the sauce in a large, oven safe, round casserole dish. Spread it around in a thin layer. Then, alternate your sliced veggies in a circular pattern, overlapping like so: Tomato - eggplant - zucchini - yellow squash - tomato etc.



Then, pour the remainder of the sauce over the assembled veggies. Bake for about 30 minutes, until warmed through and bubbly.

* If you are not dairy free, this would be great with a little Parmesan cheese sprinkled on top. *



Serve warm.

My goodness, this dish was not only beautiful, but seriously delicious, too! It was the hit of the dinner! And not to mention wonderfully healthy! 



The sauce was cozy and warm with the oregano and basil, and rich and creamy from the cashews.

The oven worked its magic on the veggies - they became soft and tender. A perfect pairing with the tomato sauce!

Tempura Cauliflower Steak w/ Blistered Italian Spring Veggies! GF, V, SCD, BED & Paleo!

Alright. It's time for a show stopper recipe. Holy cow you guys this is one for the books, I'm serious.




So while I was in Wisconsin, my family wanted to celebrate my graduation. So we decided to have a BBQ -- a classic Northwoods celebration!



Since clearly I can't eat BBQ fare, I was encouraged to make a nice dinner. Challenge accepted.





So what did I make?? "Tempura" Cauliflower Steak with Blistered Italian Spring Veggies.




Wow wow wow. That's about all I can say. My dad, who has an aversion to all veggies other than corn and Lima beans:) proclaimed that this was the best thing I've ever made.




I'll take that as a win for team GFHT! :)





This treat was Gluten and Grain Free, Vegan, Specific Carb Diet & Body Ecology Diet friendly, & Paleo!




Here's what you need: (Serves one)


1/3 head of cauliflower 

1 egg, beaten (vegan option: plain almond milk)
1/3 cup almond flour

handful green beans
1/2 zucchini, sliced
6 mushrooms, sliced (BED use shittake mushrooms)

Sauce:
15 grape tomatoes or one large tomato (BED sub one red pepper)
1/2 red pepper, chopped
2 garlic cloves
1/2 onion, chopped
2 garlic cloves, minced
1/4 tsp dried basil
1/4 tsp dried oregano

Fresh basil, chopped (garnish)


Preheat oven to 400 degrees. Cut 1/3 of your cauliflower head. I used the "center cut" that included the root, and saved the outer thirds for snacking and other meals. Set aside and set up your breading station.



Breading process: You'll need a bowl, medium sized plate, and your tin foil-lined, olive oil-sprayed baking sheet. In the bowl, beat your egg and add a pinch of salt (or use almond milk). On the plate, spread out the almond flour with a pinch of salt. Take your cauliflower, coat it in egg, and then place it on the plate with the almond flour and coat it evenly with the almond flour. Then place it on one half of the baking sheet. Spritz with olive oil, and sprinkle with salt and pepper.

On the other half of the baking sheet, place your green beans in a single layer. Spritz them with olive oil, sprinkle with salt and pepper, and place the entire baking sheet into the oven. You'll bake the cauliflower for a total of 40 minutes. But at 20 minutes, when you flip the cauliflower, remove the green beans and set aside.

Meanwhile, create your sauce. Saute your onions and garlic in 1-2 tsp EVOO, salt, pepper, and dried herbs over medium heat. After about 4 minutes, add your red peppers. Let those soften, about 4 minutes. Then add your tomatoes and let them cook for about 4 more minutes. Then, carefully transfer the veggies to the food processor, and process until it is smooth. You'll need to scrape the sides a few times.

Also meanwhile, sauté your mushrooms and zucchini in 1-2 tsp EVOO. Let them brown on one side (about 3 minutes), and then flip and let the other side brown. Set aside.



To assemble, place your cauliflower on the plate. Top with the veggie mixture and sauce, and garnish with chopped fresh basil. I put the majority of the sauce around the cauliflower on the plate to minimize the contact between the sauce and the breading on the cauliflower so it would stay nice and crispy:)




You guys. I cannot even begin to tell you how amazing this was. I know I can be a bit of a "gusher" about food...but this is next. level.

The first thing you notice when you bring it to the table is how freaking gorgeous it is. There's something "rustically fabulous" about the "breaded" and substantial steak of golden brown cauliflower, topped with a stately pile of blistered veggies, and bright red tomato sauce. It is regal. It is elegant. It is something to be proud of:)





Then, the taste is just outrageous. The bright and subtly sweet tomato sauce is the perfect backdrop to the nutty and homey cauliflower. The bright basil accents the caramelized green beans and zucchini. So. Good.





And then the textures. This may be the best part. Let me tell you- you've got to cut into that cauliflower with a steak knife! It is still crunchy, but the outsides have caramelized and become a little chewy and have some give. And coating the outside is this sweet and nutty coating of almond flour that give it a richness and butteriness that you've never experienced with cauliflower before. It was cauliflower, transcended :)





And the creamy sauce with the crunch veggies was just delightful.


So all in all, this was a terrific meal to celebrate my graduation. It was special, and seemed a bit extravagant--but in reality, it was just the humble kitchen superstar--cauliflower!





As summer is beginning to wane, we're going to have lots of "special occasion" meals. Give this one a try!

OMG Slaw! GF, V, SCD, BED & Paleo!

Hey everyone!

How was your Fourth of July!?



Mine is going great! I'm up in Wisconsin at my family's lake home with my entire family. I'm having so much fun! My little niece, Baby A, is here, and she is just the gosh darn cutest thing in the entire world.




It's so much fun to see things through her eyes and watch her discover things for the first time.




So for Independence Day, we had a traditional BBQ cook out. My dad made beer boiled brats and hamburgers on the grill, and I made a delicious dish to share.



Since I was feeding a big number, (10!!), I decided to make a dish that goes a long way, and is a crowd pleaser.

Let me tell you this was a HIT! Everyone LOVED it and gobbled it up.




I've decided to call it my "OMG Slaw," since that's what everyone said when they ate it..."Oh my gosh this is AMAZING!"



And this colorful dish is Gluten Free, Vegan, Specific Carb Diet and Body Ecology Diet friendly, and Paleo!



Here's what you need: (Serves 10)

1/2 head purple cabbage, sliced thin
3 large carrots, sliced into matchsticks
1 red pepper, diced
8 radishes, sliced thin on a mandolin
24-30 sugar snap peas, sliced thin
1 red onion, sliced thin
1 avocado, diced
1/4 cup cilantro, minced
1/2 cup sunflower seeds
1/4 cup pumpkin seeds
3 pinches salt

Dressing
1/3-1/2 cup almond butter
2 tsp fresh ginger, grated
3 Tbsp Raw Apple Cider Vinegar
Juice of one lime
8 drops pure liquid stevia (SCD use 1/2 tsp honey)
2-3 Tbsp water

First, prep all your veggies. Cut them as thin as possible by either carefully using a mandolin (use the hand guard!) or with a sharp knife. In the largest bowl you have, combine the veggies. Add your pinches of salt, seeds and cilantro, and toss to mix.

Then, in a Pyrex measuring cup or a separate bowl, make your dressing. Using a microplane or grater, grate your ginger directly into the Pyrex, then whisk to combine the other ingredients. You'll need to add about 1-2 Tbsp water to thin out the sauce into a "drizzly" consistency.

Coat all the veggies with the dressing, and serve garnished with more seeds.

Refrigerate before serving. It will keep (and keep getting better) for three days in the refrigerator.



Oh my goodness this slaw was so freaking awesome. I can't even begin to describe the bright, fresh flavor of this slaw. There's nothing like spending the day on the lake, and enjoying a cold, crisp salad for dinner. It was so refreshing.

I'm serious, everyone flipped out over this salad. There were NO LEFTOVERS! People were licking their plates, the dressing was so good.




First of all, it is a beautiful dish. You eat with your eyes first, and this definitely jumped off the plate. There was purple and pink, green, red and orange! So beautiful.




And the texture was so satisfying. The cabbage was so incredibly crunchy, and the avocado was nice and creamy. Finally, the seeds gave a chewy, salty pop that really hit the spot.

Finally, that dressing. It was nutty and bright from the lime juice and apple cider vinegar. It was a little sweet, and wonderfully fresh from the cilantro. Cilantro and lime are a match made in heaven:)






What a treat. Seriously so good. This week is going so well. We're celebrating my niece's first birthday, and my graduation while we're here. I made a gorgeous gluten free cake with coconut oil frosting for Baby A's birthday celebration. I'll post about that soon. It was a hit!

Question for all my lovely readers: There's a new trend with food production called aquaponics, which is a sustainable food growing system circulating water between fish and plants. It's herbicide/pesticide free and uses less water than traditional farming. How do you feel about it? Would you buy produce grown using aquaponics?

Roasted Beets & Cauliflower w/ a Spicy Butternut Cream! GF, V, SCD & Paleo!

How's everyone doing? It's Thurrrsdaaaay! And you know what that means...it's almost the weekend! :D



I don't know about you, but it has been a great week! Aside from the fact that it is mid June and 60 DEGREES, New York is beautiful right now...albeit cold.



Earlier this week, I went to an awesome concert with my friends. It was super fun...the band was R5. They play amazing music -- check 'em out!



So given the chilly weather (yes, you read that right...it's downright frigid in NYC right now!), I decided to make a warm and cozy dinner. And it. was. fabulous.



During the summer, when it's super hot and humid out, I have a rule that I don't turn the oven on:) But since the heat is not an issue, bring on the roasted veggies!




So what did I make? I made Roasted Beets & Cauliflower w/ a Spicy Butternut Squash Cream! And there are 2 ways to serve it!




And it's Gluten Free, Vegan, Specific Carb Diet friendly and Paleo!

Here's what you need: (Serves 1)

1 beet, sliced into 1/4 inch rounds
1/3 head of cauliflower, broken into florets
3/4 cup butternut squash, steamed
1/2 sweet bell pepper (red or orange), chopped
1/4 tsp cumin
1/4 tsp chili powder
baby spinach, chopped (garnish)




Preheat oven to 400 degrees.

Scrub and dry your beets, and slice into 1/4 inch rounds. On a tin-foil-lined, olive-oil-sprayed baking sheet, place your beet rounds and cauliflower florets in a single layer. Spritz with olive oil and bake for 40 minutes, flipping once, halfway through.

Meanwhile, steam your butternut squash, either by using a steamer basket, or microwaving it in a Pyrex measuring cup with 1 inch of water, covered, for about 8 minutes.  (I did the later)

While it's cooking, sauté your bell pepper in a large non-stick pan in 1 tsp EVOO, salt, pepper, and spices. Let it cook for about 5 minutes over medium heat, until it begins to soften. When your butternut squash has finished steaming, add it to the skillet with the bell pepper. Let them cook together for about 5 more minutes.

Then, transfer to your food processor, and process until smooth. You'll have to scrape the sides several times. It helps to do this when the veggie mixture is still hot and steaming (be careful!) because the steam helps to create a creamy texture.

When your beets and cauliflower come out of the oven, sprinkle with sea salt.

From here, you have two options: You can plate it as a large dish over the cream sauce, OR, you can create little bite sized Beet Blooms. These would be perfect for an appetizer or tapas!



Large Plate:
Take your roasted beets and slice them into match sticks. Place a bed of the butternut squash cream on the plate, and artfully mound the beets and cauliflower on top. Garnish with chopped spinach.



Beet Blooms:
Leave the beets as whole rounds. Top each round with 1-2 Tbsp of the butternut squash cream. Top that with a cauliflower floret and garnish with chopped spinach.




What a delicious meal! This combination of flavors is not one that traditionally goes together. But my goodness, is it ever tasty!

First of all, roasted veggies are SO. GOOD. Especially beets and cauliflower. The beets' inherent sweetness is intensified, and they become chewy and wonderfully caramelized. The cauliflower also becomes caramelized and deliciously golden brown! YUM!




And then the butternut squash cream is terrific. Butternut squash and bell peppers have a lot of natural sweetness to them. So when you add the cumin and chili powder, it complements that sweet note beautifully! It is the perfect accent to the beet's earthy sweetness and the savory cauliflower.




The textures are wonderful too. The beets are chewy, the butternut squash is rich and creamy, and the cauliflower is perfectly crunchy and has a nice bite to it.




Finally, it is a stunning dish. The deep purple of the beets bounce off the plate against the burnt orange butternut cream sauce, white cauliflower and bright green spinach. And the Beet Blooms are so cute! They look like little dainty flowers! A great party food:) (Just watch out for purple fingers! -- a knife & fork food for sure!)

A "ten" if I've ever seen one!
