Roasted Red Mash! GF, V, BED!


We’re in the double digits of July! When did this happen?!? Let’s all wear our PJ’s inside out tonight and flush the toilet 3 times and do a dance so that summer will start slowing down! :) Haha…that was what we did growing up to try and get a snow day! Oh the memories!

Anywho, tonight I made a quick dinner…because the Bachelorette is on at 7pm here in Wisconsin. Haha Priorities. What can I say, it’s my guilty pleasure.

Soo, for dinner, I made a Roasted Red Pepper and Cauliflower Mash with Roasted Veggies. It was delicious and so satisfying. Warm, creamy, and delightful!

And it’s gluten free, vegan, and Body Ecology Diet friendly!

Here’s what you need: (Serves 3)
Mash:
3/4 head of cauliflower, broken into florets and steamed
1 red pepper, roasted
1 garlic clove, chopped
1/4 tsp paprika
1/4 tsp chili powder
salt
1/3 cup cashews
Veggies:
6 stalks of asparagus
1 bunch of broccoli, broken into florets
3 radishes
2 green onions, sliced
so wonderful!
First, get your red pepper roasting. To roast the red pepper, I literally set it on our gas flame burner and kept turning it with tongs until it was completely charred. I then put it in a bowl and covered it with plastic wrap so that the steam loosened the skin. Then, after about 15 minutes, the charred skin peels right off (use your hands), and you’re left with a wonderful, roasted pepper! If you don’t have a gas flame, you can do the same right under the broiler! After you peel the skin and take out the seeds, chop the flesh and set aside.

Next, preheat oven to 400 degrees. Put your veggies on an olive-oil-sprayed baking sheet and spritz them with olive oil spray. Sprinkle with salt and pepper and roast for about 25 minutes, flipping halfway through.

Meanwhile, steam your cauliflower for about 5-6 minutes, until tender. Combine it in your food processor with the red pepper, cashews, garlic, and spices and blend until thick and creamy.

To serve, put a mound of the mash on your plate, top with the roasted veggies, and garnish with green onions. Simply delicious!

This meal was wonderful! It was warm and soothing … comfort food “Happy Tummy Style!” It was not only beautiful, but flavorful and delicious!

The mash was so creamy! It melted in your mouth! It had a complex flavor with the smokey and slightly sweet roasted red pepper, and the gently hot chili powder! Paired with the tender-crisp roasted veggies…it was splendid!

And the colors were just stunning. The orange and deep green complimented each other perfectly! An all around 10!
